Rename Echopype-examples to Echostack-examples #8

as more notebooks are added to demonstrate interconnected functionality across multiple Echostack repositories, we should rename echopype-examples to echostack-examples! this would also align with the need for cross-repository CI to ensure that the notebooks continue to run when changes are introduced in any of the related packages=> echostack-org/echopype-examples#105
