Feature Request: Configure which tags get added to videos on a per-channel basis. #754

Description

@whale-food

I would love to see a new feature that allows you to customize which tags get added to downloaded videos - per channel would be even better. Jellyfin has a parental control to only expose certain videos to an account based on the tags that they have, so being able to have Youtarr automatically add custom tags to newly downloaded videos would be super helpful. Thanks so much for this great project!

    Question: For the parental control settings -- does my existing support for adding a custom Rating level per channel/video not work for you?

    For example for a channel, you can set the channel to have a custom Rating set for all videos:

    or you can set a custom rating override per download in the Download Settings dialog:

    And then in Jellyfin, you can set a rating filter per user in Parental controls:

    Yeah theoretically that would also work! So, this isn't that big of a deal.

    I do have a bash script that is doing exactly what I need now for adding tags too, and I thought about just going the extra mile tomorrow and trying to natively add the same feature in Youtarr and opening a PR for it.

    Would you mind if I gave that a shot? If I can't manage to implement it, I'll just close this!

    I was still planning to implement this -- it will be useful for other reasons, just wanted to check-in since the rating method would work for you until then.

    If you want to give it a shot, go ahead! Make sure you follow the guidelines in https://github.com/DialmasterOrg/Youtarr/blob/main/CONTRIBUTING.md

    Here's my PR! I'm super new to this, so please let me know if I need to do more in the future. I tried to follow the guidelines and updated the README.md and ran the npm test since I read through them. Everything seems to look good. I'm happy to update this though if something is missing. I tried to keep the changes to a minimum (no AI generated code that was un-reviewed by me), but wanted to implement it in a robust way. Thanks for your work on this!
