Set necessary env variables in .env to ensure platform works on automatic restart

It should be ensured that the platform works when servers are automatically restartet.
At the moment this is not the case, as env variables are set during the installation.

This should be changed to a .env file

also "restart: unless-stopped" needs to be set for each component in each docker-compose
